ABOUT Milan

My name is Milan. I'm a bartender, cook, writer, and photographer who has spent six years working across multiple countries — Paris, Vienna, Amsterdam, Vietnam, Iceland, and New Orleans - and now New York City, where I currently work behind the bar.

Room8 is built on something simple: the best writing about hospitality comes from inside it. I started this because I kept noticing the gap between how the industry is written about and how it actually feels to work in it — the pace, the economics, the people, the craft. I've been on both sides of the pass, behind enough bars to know what a good drink costs to build, and in enough cities to know that food and hospitality are often the most honest thing about a place.

That's what I bring to the table. Not research from the outside, but experience from within — and the writing to match.

Room8 takes its name from a dorm room in Amsterdam where much of this started. Six months that shaped how I work, what I pay attention to, and why I believe the best stories are always told from inside the room.
